How to Winterize Your Outdoor Kitchen in Meridian, Idaho

Step-by-step guide to protecting your Meridian outdoor kitchen before winter hits — covers gas lines, stone countertops, grill grates, and refrigeration.

Meridian’s winters hit harder than most outdoor kitchen owners expect. The freeze-thaw cycles between October and March — where temperatures swing from the 40s during the day to single digits overnight — are the number one cause of premature outdoor kitchen damage we see. The good news: thirty minutes of proper winterization prevents 95% of it.

This is the same checklist our service team follows when we winterize customer kitchens in Lochsa Falls, Paramount, and South Meridian every October. Follow it and your outdoor kitchen will come through Meridian’s winter in perfect condition.

When to Winterize in Meridian

The target date is mid-October — before the first hard freeze. In Meridian’s 83642 and 83646 zip codes, the first freeze typically arrives in late October, but we’ve seen frosts as early as October 8. Don’t wait for the forecast. If it’s October 15, do it now.

Step 1: Shut Off the Gas Supply

This is non-negotiable and should be your first step every fall. Locate the shut-off valve on the dedicated outdoor gas line — it’s typically within 3 feet of where the line exits your home’s foundation. Turn it to the off position (perpendicular to the pipe). Then open each grill burner knob briefly to bleed any residual gas from the line.

Label your outdoor gas shut-off valve clearly with a weatherproof tag. When you come back in spring, the first step is turning it back on — and you don’t want to be hunting for it.

Step 2: Deep Clean the Grill

Cleaning before storage matters more than cleaning in spring. Grease left in the grill over winter attracts moisture, promotes rust on cast iron components, and can become a fire hazard when you relight in April. Here’s the sequence:

  1. Run the grill on high for 15 minutes to burn off residue.
  2. Brush grates thoroughly while hot with a stainless steel grill brush.
  3. Remove grates once cooled and scrub with dish soap and hot water.
  4. Empty and wipe out the grease trap / drip pan completely.
  5. Wipe burners with a dry cloth — do not use water on cast iron burners.
  6. Coat cast iron grates and burners lightly with cooking oil to prevent rust.

Step 3: Protect Your Countertops

Granite, concrete, and natural stone countertops all need fall sealing before Meridian’s freeze-thaw cycles begin. Unsealed stone absorbs moisture; when that moisture freezes, it expands and causes microfractures over time.

Apply a penetrating stone sealer (we use Miracle 511 Impregnator on our projects) to all stone surfaces in October. Wipe on, let sit for 5 minutes, wipe off. Takes 20 minutes for an average island.

⚠️ Common Mistake

Don’t use surface sealers (like grout sealer) on granite countertops — they cloud the surface. Always use a penetrating/impregnating sealer specifically rated for granite or natural stone.

Step 4: Drain and Disconnect the Outdoor Refrigerator

Outdoor refrigerators should not run below 35°F ambient temperature — the compressor was not designed for it. Leaving a refrigerator plugged in and running through Meridian’s winters will shorten its lifespan significantly.

  1. Empty all contents.
  2. Unplug the unit or switch off the dedicated circuit breaker.
  3. Prop the door open slightly with a folded cloth to prevent mold growth.
  4. If the unit has a water/ice line, shut it off and drain it completely.

Step 5: Cover Everything
