The grill gets the most use and attention, but the supporting appliances โ refrigerator, side burner, access drawers, ice maker โ determine how functional your outdoor kitchen actually is day to day. Here's how to think through each category.
The grill anchors the island. For Meridian builds, we most commonly install Napoleon Prestige, Weber Summit, and Blaze Professional in mid-range islands, and Lynx, Twin Eagles, and DCS in premium builds. Size depends on how often you cook for large groups โ a 36-inch grill covers most Meridian families. 42-inch and 48-inch models are common in Tuscany and Lochsa Falls where lot sizes allow larger islands.
A dedicated outdoor-rated refrigerator is the single appliance that most changes how you use an outdoor kitchen. With cold storage at the island, you stop making trips inside during cooking. Marine-grade or outdoor-rated units from brands like Perlick, True, and Coyote are built for Idaho's temperature swings. A standard undercounter unit (24-inch wide, 5.0 cu ft) is sufficient for most Meridian builds. We install these in a dedicated access door compartment cut into the island body.
A two-burner side unit lets you run sauces, boil corn, or heat sides simultaneously with the grill. Takes roughly 12 inches of island counter space. In L-shaped islands, the side burner typically goes on the return run where it's closest to the prep zone. In straight islands, it sits to the right of the grill.
Stainless access doors give you storage for propane, tools, and supplies within the island body. Drawers work better for smaller items and are easier to access than doors when your hands are full. Most Meridian builds include two access doors at minimum. We use marine-grade stainless hinges and hardware rated for outdoor use โ standard interior cabinet hardware corrodes within one Idaho winter.
The three constraints that determine island size on any Meridian property are: available patio space, gas line routing distance, and HOA setback requirements. During the free on-site consultation we measure all three before recommending a layout.
As a general guide: a single-run straight island needs at least 8 feet of linear space with 3 feet of clear walkway on each open side. An L-shaped kitchen needs a minimum 10x10 foot patio area to function comfortably. U-shaped kitchens with bar seating โ common in Tuscany and Lochsa Falls โ require at least 14x12 feet. If your patio is smaller than these minimums, we design a compact island that maximises appliance count within the available footprint.
